The Story

Cache Valley was making cheese before Utah was a state. We keep that going the slow way — forty Jerseys milked at first light, curd by nine, wheels in the cave by dark. Nothing arrives in a tanker, and nothing leaves before it’s ready. Just grass, patience, and a hillside doing quiet, delicious work.

The Cheese

Raised on grass.
Finished in the dark.

Every wheel starts as morning milk and ends in a cave dug into the hillside behind the make room — cool, damp, and patient. We make seven cheeses through the year. These four never leave the board.

Wellsville Reserve

Nutty and deep, with a broth-like savor that comes from summer pasture. The wheel we send to competitions — and the one we run out of first.

Stone Barn Cheddar

  • Clothbound
  • Butter-rubbed

Wrapped in muslin, rubbed with butter, and left alone for four hundred days. Crumbly, caramel-edged, and worth every single one of them.

Hollow Bloom

A soft white round with a cream line that moves like slow honey. Eat it the week you buy it — it wasn’t going to last longer anyway.

Sardine Canyon Blue

Named for the pass south of the farm. Sweet Jersey milk keeps the blue polite — electric veins, gentle finish, no apologies needed.
